Not sure if this can be done on vSwitch/VMware level, btw..

I would like to have a VM in my home-lab which is not going to the internet directly with my home public IP.

This is the use case: I would like to be able to give a VM to a friend or work colleague but I don't want to worry about what they will do. I mean, OK I trust them, but it's still my personal ISP-IP...

I'm wondering if a dedicated VPS could be used to route all the traffic from/to this virtual machine?
Would be cool to do all the work at vSwitch level in order to avoid any specific configuration on the VM...

Any other idea?

Put it on an isolated VLAN (don't allow egress) and use pfSense (for example) to give him/her OpenVPN on the pfSense to access to the VM.
