My offer of 5 for $275 was also accepted last month. $50 is better.
I got a lot of 12 for $500 from another seller this month.

I like the 7K4000 better so I skip on the older drives. Both 7K3000 and 7K4000 3TB SATA drives are often sold for $40 or so. Are the SAS drives really worth a premium?

That depends on the amount of data you transfer. For most home users it makes very little difference. Technically the SAS data channel is much better (like 10x) at detecting and correct errors (note I mean the protocol / electrical errors, but not the mechanical / on-platter errors).

If you're buying just a few disks and not moving much data, then it's a waste to go for SAS. If you are using 20+ disks and moving a few TB a day, then yeah, you might actually benefit from SAS.
